This is a great dressing for gyros or greek anything!
1/2 medium cucumber, peeled, seeded and shredded
1 c fat free plain yogurt
4 green onions, finely chopped
1/2 t minced garlic
1 T olive oil
1 t lemon juice
1/4 t salt
Combine in a small bowl and refrigerate until serving time. Makes 4 2 T servings.
